I have been trying to eat more oatmeal, thinking of anyway I can to squeeze in more. I created this thick & creamy Homestyle Country Sausage Gravy, using pureed oatmeal as the base & TVP sausage crumbles. It has all the flavor & appearance of a traditional recipe, but with a vegetarian spin. It has crumbles of vegetarian sausage, flecks of fresh cracked black pepper & a hint of sage. Ladle it over fresh, warm biscuits & breakfast is served. It is AMAZING!! I received the best approval of all, Roy liked it ~ a lot!! He has asked for it again, so I KNOW it's a Meatless Monday winner!
Homestyle Country Sausage Gravy & Biscuits ~ Vegetarian
serves 2~4 4 biscuits (I use Bisquick Healthy Heart mix to make my biscuits)
1/2 cup quick oats
2 tblsp oat bran
1 cup water
1 cup warm water
1 cup vegetarian sausage crumbs, ready to eat
2 tsp vegetarian margarine (or your favorite)
1 1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp ground sage
~ few drops Green Jalapeno Tabasco Sauce
~ salt & pepper, to taste
1) mix oatmeal, oat bran & 1 cup of water in microwave safe bowl, nuke for
1 minute, stir & return to microwave for another 30 seconds
2) let cool briefly & then add to a food processor with the other 1 cup of
warm water, puree until smooth ~ since food is warm, take precautions
to keep mixture from spilling while you are pureeing in food processor
3) pour oatmeal/gravy mixture into a sauce pan, add in remaining
ingredients & stir until combined
4) warm over low heat for 10 minutes to allow flavors to develop
5) serve over split biscuits ~ add more salt, pepper &
Green Jalapeno Tabasco Sauce ~ if desired
