Easy Fusion-Mirepoix, White Bean & Rice Soup

Easy Fusion-Mirepoix, White Bean & Rice Soup ~ celebrating the French & Cajun/Creole cuisines


I was playing around in the kitchen, just wanting to make something quick, easy and something that used up the odds-and-ends in my veggie bin.  I came up with a soup that has the best basic flavor builders of two cuisines ~ Mirepoix from the French and the Holy Trinity from Cajun/Creole.  For the soup I ~ made a mirepoix of onion, celery, carrots (French) and added bell pepper (a nod to Cajun/Creole), included beans (white, not red, for a nod to the French) and rice (for a beans/rice nod to the popular Cajun/Creole combo).  It's a mostly veggie soup, just getting it's meat flavor from the chicken broth. (adding some leftover cooked chicken would be a nice addition, too).  I'm really  happy with the flavor-fusion of these two classic veggie flavor combos, and the hit of white wine makes this simple soup just that much more luxe tasting, and the rice gives it a little creamier body, without any extra effort.  Gotta love easy flavor layering.  For me, this is a perfect way to get into the Mardi Gras spirit!  Enjoy! 

Easy Fusion-Mirepoix, White Bean & Rice Soup
makes a pot full

Ingredients
  • 1 large white onion, diced/small chop (or purple, for a more colorful soup)
  • 1 large stalk celery, diced/small chop
  • 1 large carrot, diced/small chop
  • 1 medium bell pepper, seeded/diced/small chop
  • 2 cloves garlic, thin sliced 
  • 1 Tbsp olive oil
  • 1/4 cup white wine
  • 8 cups chicken broth
  • 1 can navy beans (or fav white bean), with juice
  • 1 cup cooked white rice
  • salt/pepper, to taste
  • favorite red pepper hot sauce
 

Directions
Saute the first 5 ingredients in the olive oil until the veggies begin to turn a golden brown.  Pour in the white wine to deglaze the pot.  Add the broth, cooked rice & can of beans/juice.  Simmer all for about 15 minutes. Add salt/pepper/hot sauce to taste.  
 

Feeling & Feeding the Spirit of Mardi Gras ~ Getting my party on!

Dressing the house up for Mardi Gras!  There are lots of fun, pretty things to get you into the party mood ~ I had to look no further than to our local dollar store.  For $5 I've got strings-upon-strings of Mardi Gras beads, feather & jeweled masks and other New Orleans inspired goodies.  I just love an excuse to buy colorful, sparkly & feathery things!  How about you?  Laissez les bons temps rouler!

In just a few more days, it'll be Mardi Gras!   I'm starting to feel the spirit, and have been looking at some of my old posts that feature the flavors of Creole and Cajun spices ~ just searching for a little cooking inspiration for the coming days.  Here are some of the dishes that I've made last year, that might just make an encore appearance in my kitchen this weekend...

Cajun 15 Bean Soup & Cornbread Muffins ~ this flavorful bean soup is easy to make & has just the right blend of spices.   This combo is the perfect thing to make, now that fall is in the air...

I made a really good soup the other day ~ when it was grey, rainy & a bit cold.  I had a bag of Hurst's HamBeens Cajun 15 Bean Soup sitting in my pantry, a ham bone in the freezer & a box of Jiffy Cornbread Mix ~ the perfect storm of ingredients, just waiting to be born.  I simply followed the recipe on the back of the big 'ol bag 'o' beans, I did a 'quick soak method' version & used leftover ham instead of sausage.  Here is the online recipe version, so you get an idea of how easy it is to make.

The soup is flavorful, without being too hot.  The Jiffy brand Cornbread Mix is quick, easy, cheap & cheerful ~ alright by me!  The bean soup reheats perfectly the next day & the flavors seem to develop even more.  It's one of my new favorite bag 'o' beans soup.  It almost makes me wish for a rainy day... almost.  :)


Cajun Perch ~ Fish Friday



Cajun Perch is an easy & tasty way to cook your fish for dinner on Fish Friday.   I made this by following the same steps as I do when I make my Italian Bread Crumb Cod recipe ~  but with this flavor I use plain bread crumbs & then season both sides of the perch with a Cajun spice blend.  I make the skillet a bit hotter to get a good, quick sear on the crust & then I take the heat down to finish it off.  I give it a good spray with ~ I Can't Believe It's Not Butter Spray ~ before I dish it up.  

This seasoning would work with just about any kind of fish.  I made it with perch because that's what fish happened to be on sale ~ I'm nothing if not thrifty.  :)


Betty's Cajun Gumbo Sloppy Joes ~ topped with Coleslaw


My sister-in-law, Betty, makes the best Cajun Gumbo Sloppy Joes around & has a special way of making her recipe.  First, she uses a can of Campbell's Chicken Gumbo Condensed Soup as the base for her sauce & then she doctors it up from there.  But, what makes this recipe extra special, is that she serves her Sloppy Joes topped with a tangy, sweet & creamy, crunchy coleslaw  & that's what makes her recipe so out-of-this-world good!  I was so impressed the first time she made them for me, that this became my standard for Sloppy Joes.  I'd never had them that way before & I became hooked, so did Roy!  I always serve them this way now & as far as I'm concerned, a Sloppy Joe is not a Sloppy Joe without the gumbo soup & the coleslaw. 

Betty cooks like I do & doesn't always have recipes written down, (I'm getting better now that I have this food blog) so here is her basic recipe with a little extra that I threw in as I was cooking.  We live far apart & had to do the recipe/ingredients by phone, but I think I got it just right.

Betty's Cajun Gumbo Sloppy Joes ~ It looks so good... Don't you just want to take a bite?  I know I do!


Betty's Cajun Gumbo Sloppy Joes ~ topped with Coleslaw
serves 6~8

Making the meat mixture...
  • 1 lb lean ground hamburger
  • 1/3 cup finely chopped onion
  • 1 can condensed Campbell's Chicken Gumbo Soup
  • 1/4 cup ketchup
  • 5 tbsp tomato paste
  • 3 tbsp BBQ sauce
  • 1 tsp sugar
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp chili powder ~ or more, to taste (I always use Gebhardt's, just like Grandma Bunni did)
  • salt & pepper, to taste
When you're ready to assemble...
  • 1 lb deli coleslaw or homemade (or more, if you really like coleslaw)
  • package of sliced hamburger buns (the basic, cheapie, soft, $1, white bread hamburger buns are our favorite for this meal ~ we don't like the bread to compete with the meat ~ but choose whatever you like best)
  • Louisiana Hot Sauce, or your favorite ~ to taste, optional

In a large skillet, cook ground hamburger & chopped onion, together, until hamburger is no longer pink & is cooked through.  Drain meat/onion mixture & return to skillet.

Betty's secret ingredients...  :)


Add the can of Condensed Chicken Gumbo Soup (DO NOT ADD ANY WATER TO THE SOUP) & all the remaining Sloppy Joe ingredients, combine thoroughly & let simmer for 10 minutes ~ so the flavors can develop.  Taste & add salt/pepper, to taste. Adjust seasonings if needed. Add a little water, if necessary, a tablespoon at a time.

When you're ready to assemble ~ Spoon the Cajun Gumbo Sloppy Joe mixture over the bottom of the hamburger bun, top with a big spoonful of coleslaw & then crown the whole thing with the top of the bun.  If you're like me & you like your Sloppy Joes with a bit of a kick, add some of your favorite hot sauce before you put the lid on it.  :)

Serve with your favorite sides.  Some I like are ~ Kosher dill pickles, Lay's Potato Chips, baked beans, Frito's or more coleslaw.

 P.S.~ I think this Sloppy Joe meat mixture would make a dynamite filling for Stuffed Bell Peppers ~ just add some rice to the Sloppy Joe filling, stuff the peppers & bake.  Next time bell peppers go on sale, I'll have to try this!
P.P.S ~ I bet you could make this using ground turkey breast, too, & would come up with a winning combo ~ for either the Sloppy Joes or the Stuffed Bell Peppers...just thinkin' out loud.   :)

Mardi Gras Food & Drink ~ Roasted Cajun Sweet Potato Fries & Hurricanes

Today is the last day of Mardi Gras ~ time to pull out all the stops & go for broke!  If you are still looking for a little something to spice up your meal & cool down the heat ~ I've got a few favorites of ours to share.

I really like Cajun Sweet Potato 'Fries'.  The Cajun spice is perfect with the sweet potato flavor.  Since I roast them in the oven, they do not come out crispy like french fries, but are softer. That is fine with us, we still pick them up & dip them like regular fries.  They are also low fat since I toss them with just a bit of olive oil before roasting.  J really likes them, surprising since they have a bite.  Lucky for me ~ he is an adventurous eater for a 7 year old.  I couldn't keep him out of the plate of 'fries' I made for this post, I had to snap the pictures quick.  :)

Let's not forget the favorite cocktail of Mardi Gras ~the Hurricane.  Perfect with all with the spicy food that is being consumed today.  Nothing beats a good, fruity, rum drink to make you think of warm weather & slow Southern style.  Let's crank up the jazz and...

Mardi Gras Treats ~ Roasted Cajun Sweet Potato 'Fries' & Hurricane


Cajun Sweet Potato 'Fries' with Spicy Ranch Dipping Sauce
serves 2-3

Slice like french fries
for sweet potato 'fries'
2 large       sweet potatoes, peeled
1 tbsp         olive oil
1/2 tsp        Cajun spice mix (or to taste)

-                 Pam cooking oil spray
-                 extra Cajun Spice to sprinkle
-                 salt & pepper, to taste



Spice it up!
for dip
2 tbsp     yogurt
1 tbsp     ranch dressing
1 tbsp     ketchup
-                few drops Louisiana Hot Pepper Sauce (or to taste)
-                salt & pepper, to taste








1)   preheat oven to 425

2)   slice sweet potatoes into french fry sized strips, toss with oil  & spices
               
3)   spray cast iron skillet or pan with  Pam & put spiced fries in a single layer

4)   bake for 20 minutes & then turn fries; bake for additional 20 minutes

5)   while fries are roasting, mix all dip ingredients & keep in fridge until
      ready to eat

6)   when fries are done sprinkle with additional spice,
      salt & pepper if desired

7)   serve with dip ~ Enjoy!

Easy Red Beans & Rice ~ a Mardi Gras Meatless Monday

Quick Red Beans & Rice with Vegetarian Seitan Sausage

Meatless Monday + Mardi Gras = Red Beans and Rice.  Who doesn't like a bit of Creole / Cajun spices to wake up their day/night?  I know I sure do.

Now, as  much as I like to cook from scratch, it isn't always possible.  After school commitments & other things often vie for my attention.  Cooking has to go on the back burner, so to speak. (heehee) I have found that on those days, using some canned items can come in really handy.  With a bit of doctoring up, they can taste almost as good as from scratch.  I'll take almost.  It's certainly better than takeout.

If you want a good meatless homemade version, check out this one from FatFree Vegan Kitchen, it is really good.  But ~ if you want a quicker version, because you just want to eat & time is ticking... try my easy version & get to eatin'.

Quick Red Beans & Rice
serves 2 ~ double recipe for 4

2 cups                   cooked rice

1 large can            red chili beans in chili sauce

1/4 cup                  onion, diced
1/4 cup                  celery diced
1/4 cup                  green bell pepper, diced
1 tbsp                    olive oil

2 links                   vegetarian sausage, sliced ~ store bought or homemade (optional)

-                             Cajun/Creole spice mix, to taste (optional)
-                             Louisiana Hot Pepper Sauce, to taste
-                             salt & pepper to taste



While your rice is cooking, saute the onion/celery/green pepper (know in Southern kitchens as the Holy Trinity) in olive oil until soft & onions are golden.

Once veggies are done, add the can of chili beans w/sauce & smash some of the beans with the back of a spoon to make it a bit creamy.  Add the sliced sausage to the pan if using.

Add some Cajun/Creole spice mix if you like your beans hot. If you are feeding kids - just let everyone sprinkle the spice on their own plate at the table.

Heat until beans & sausage are heated through. Add a little water, if needed, to thin it a bit. Ladle mixture over rice.

Serve with Louisiana Hot Pepper Sauce on the side.
