I made a really good soup the other day ~ when it was grey, rainy & a bit cold.  I had a bag of Hurst's HamBeens Cajun 15 Bean Soup sitting in my pantry, a ham bone in the freezer & a box of Jiffy Cornbread Mix ~ the perfect storm of ingredients, just waiting to be born.  I simply followed the recipe on the back of the big 'ol bag 'o' beans, I did a 'quick soak method' version & used leftover ham instead of sausage.  Here is the online recipe version, so you get an idea of how easy it is to make.

The soup is flavorful, without being too hot.  The Jiffy brand Cornbread Mix is quick, easy, cheap & cheerful ~ alright by me!  The bean soup reheats perfectly the next day & the flavors seem to develop even more.  It's one of my new favorite bag 'o' beans soup.  It almost makes me wish for a rainy day... almost.  :)
