Recently, I was looking at the blog ~ Chocolate-Covered Katie ~ & read a post on one of her family recipes for ~ Lentil Sloppy Joes. I had some lentils in the pantry & thought it sounded like it would make a great meal. I cooked the lentil mixture ahead of time & it really thickened up nicely, then I just reheated it before serving dinner. J LOVED it & asked for seconds. He had a hard time keeping the filling in the bun, (8 year old fingers can get a little smoosh-happy sometimes :) so I turned his into 'open faced' Sloppy Joes, but I ate mine the regular way. I did add some cheese, lettuce & tomatoes to our Sloppy Joes ~ just to get some extra protein & veggies into my kid. Worked like a charm!
