Easy Old-Fashioned Graham Cracker Icebox Cake


Sometimes I like to make a simple and easy to prepare dessert, one that is very forgiving and tastes great. It's my spin on the classic  ~ Old-Fashioned Graham Cracker Icebox Cake.  For my version I line a dish with plastic wrap, leaving the ends hanging out so it's easier to remove at serving time.  Then I just make layers ~ starting with a bottom 'crust' of graham crackers (regular, low fat, fat free or cinnamon); covering that completely with layer of  pudding (I use whatever flavor of instant pudding sounds good at the time, regular or sugar-free);  then a layer of chopped fruit (like thin sliced banana, drained canned peaches/fruit cocktail/Mandarin oranges, shredded coconut or a combo of them all); and then a thin layer of Cool Whip (any variety).  Depending on the size of the dish I'm using, I'll make either two or three layers, ending with the Cool Whip on top, and then adding a sprinkling of crushed graham crackers as a garnish.  I then put the 'Icebox Cake' into the fridge, and let it sit for 8 hours/overnight, that way the moisture will be absorbed by the graham crackers and it will become solid enough to cut. 


When it's time to serve, I just use the plastic wrap to carefully pull the 'cake' out of the dish. It should now be holding its shape and be easy to cut. We like it made in all different flavors, I'll use ~ regular, sugar-free, fat-free or low-fat ingredients ~ just depends on my mood and what is lurking about in my fridge or pantry. This little dessert is also a great way to use up leftover fruit or pudding, and makes little sweet treat odds-and-ends go a bit further.  Gotta love that!


Brown Sugar Ham & 15 Bean Chili Soup


Lately, I've been trying to use up fridge leftovers and older things that have been hanging out in my pantry.  (it's all a by-product of tearing up my house while getting new flooring in the kitchen-side of the house)  This time I used the big, leftover brown sugar ham bone/meat from Easter and combined it with a bag of Hurst Beans 15 Bean Chili Soup. 

I made it off the cuff, throwing in this and that.  I added a can of V8 juice, and when the beans were almost done I added some cubed sweet potatoes, onions, a little liquid smoke and a few other leftover veggie bin rejects.  I also added the brown sugar glaze 'jelly' that was remaining in the ham container.  The whole thing had an addicting flavor, similar to baked beans, but with a lot more depth.  Roy and I couldn't get enough of the stuff.  Too bad I won't be able to make it again and get the same flavor.  That's the beauty and the curse of making a ~ Clean Out the Fridge Soup ~ you never really know what you are going to get...and this time the soup was a definite two-thumbs up!  :)

 

Easy Ham & Potato Soup

Easy Ham & Potato Soup ~ This was such a comforting and tasty meal.  We'll be making it all winter!

Yesterday afternoon, my son & I were watching cooking shows on PBS.  (I know, my 8 year old will watch cooking shows with me ~ how cool is that? :)   There was a recipe for a potato and leek soup that caught his eye and he decided that's what he wanted for dinner.  I didn't have leeks, but I did have onion and some leftover Christmas ham in the freezer, so that's where the inspiration for this soup came from.

I threw in some-of-this and a bit-of-that.  We all thought the soup was delicious and we thoroughly enjoyed our dinner.  Roy definitely wants me to make it again, so I thought I might as well share it on the blog.  Hope you like it as much as we did.  It certainly was easy enough to make and using the condensed soup/leftover ham made it super simple and quick.   Enjoy!

Easy Ham & Potato Soup
serves 3~4 

Ingredients
  • 1 can of condensed ~ Cream of Chicken ~ soup
  • 2 1/2 cups water (maybe a little bit more)
  • 2 medium red potatoes, peeled and cut into small cubes
  • 1 small onion, diced
  • 2 stalks celery thin sliced
  • 1 cup chopped ham
  • 1 Tbsp olive oil
  • 1/2 tsp dried basil
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1 tsp chicken 'Better Than Bouillon' (or a bouillon cube) 
  • salt & pepper, to taste
Directions

Saute the diced onion and sliced celery in the olive oil for 3-5 minutes or until translucent.  Add the potatoes and the 2 1/2 cups of water and simmer until the potatoes are tender, about 10-15 minutes.

Add the can of condensed soup, chopped ham, basil, onion powder, garlic powder and chicken bouillon.  Stir until combined and maybe add a little bit more water if desired. (depends on how much water evaporated while the soup was simmering and how thick/thin you like your soup)  Simmer for an additional 5 minutes.  Salt and pepper, to taste.  Serve with your favorite bread.


Last of the Turkey Leftovers...

Leftover Thanksgiving Turkey ~ Making soup is a tasty and economical way to use up the last of the turkey.


Last night, we finally had the last of the leftover turkey from our Thanksgiving Day dinner ~ it was fun while it lasted.  Besides the requisite turkey sandwiches, we also ate it with different veggies/sauces/gravies, in sweet 'n' sour stir-fry, added to salad, and in my favorite way ~ as soup.

It took a few days, but we finally picked the bird clean.  I took the carcass and boiled the bejebbers out of it ~ sure did make the house smell good!  I turned that big ol' pile o'bones into a really rich, tasty stock/broth.  To that I threw in some chopped veg & shredded turkey meat and we were good to go ~ Turkey & Veggie Soup.  We ate a lot, but still managed to have some leftover soup, so the next night I doctored it up/thickened it up and turned the remaining soup into Turkey & Dumplings.  This time I made it with Bisquick dumplings.  (I guess that made the Turkey & Dumplings ~ leftover, leftover leftovers ~ try and say that fast 3-times)  Gotta love leftovers when they taste this good.  Hope you got as many meals out of your bird as we did ours!


Eggnog Bread Pudding done 3-Ways ~ Individual servings, made in the microwave


I woke up really hungry the other morning...  I had some leftover biscuits from Thanksgiving that needed using up...  I also had a little bit of eggnog and pumpkin puree lurking in the fridge.  Hmmm, looked like the makings of a bread pudding to me!  (my friends ~ Trina and Sarah ~ have been talking about/sharing bread pudding recipes with me, so it's been on my mind lately)  This time around, I decided to try making my bread pudding in the microwave, in individual glass baking cups.  Since I was making this up as I went along, I decided to try making each one just a little different.  I made this for breakfast, but it could easily be made for dessert, also.  I liked it best when eaten warm, right out of the microwave oven, with an extra splash of eggnog.  Starting my day off with a little homestyle, comfort food ~ Aahhh.  Cooking it in the microwave may not be traditional, but it sure is quick and easy.  Sometimes, I like it like that.  How about you? ~ Enjoy!

Pumpkin-White Chocolate Eggnog Bread Pudding (bottom) & Chocolate Chip Eggnog Bread Pudding (top) ~ These are tasty, easy and quick to make.  They're also a great way to use up older bread, biscuits and rolls.  It's a win-win all-around!

~  I used a 12 oz individual-sized glass baking dish and filled it with about a heaping cup of the bread/egg mixture.  The basic Eggnog Bread Pudding and the Chocolate Chip Eggnog Bread Pudding took about 1 minute and 3o seconds to cook.  The Pumpkin-White Chocolate Eggnog Bread Pudding took about 2 minutes to cook. ~

Eggnog Bread Pudding ~ Three Ways ~ single servings, made in the microwave



Basic Ingredients
  • leftover biscuits, bread or rolls ~ torn/cut up into small'ish chunks
  • large egg(s)
  • eggnog ~ low fat or regular
  • cinnamon
  • nutmeg
  • raisins
  • vanilla extract

For every one cup of  torn up ~ bread, biscuit, rolls or a mix ~ you will need...
  •  one large egg, beaten
  • 1/4 cup eggnog (or milk of choice ~ dairy/soy/nut ~ plain/flavored)
  • 1/2 Tbsp raisins
  • 1 tsp sugar or sweetener of choice ~ or to taste ~ depends on how sweet you like your bread pudding (optional, I'd definitely add if using a plain milk)
  • 1/4 tsp cinnamon
  • few gratings of fresh nutmeg
  • few drops vanilla extract
  • pinch of salt (optional)
  • microwave safe custard cups, small ramekins or mini glass baking dishes ~ sprayed with Pam
Ready to put in the microwave...

Basic Directions

In a medium bowl, combine until well blended ~ the egg(s), eggnog, raisins, cinnamon, nutmeg, vanilla extract, sugar (if using) & salt (if using).  (**add any of the following variations/changes to the basic mixture at this time) Mix in the torn-up bread and let sit for 10 minutes, so the bread can absorb some of the moisture.  Push down on the bread, several times during the 10 minutes, just to make sure it is completely covered with the mixture.  (it shouldn't, but if it seems a little dry, add an extra splash of eggnog)

Spoon into your prepared microwave safe glass custard cup/ramekin/small baking dish.  Microwave on High, for one minute.  Check center to see if done.  Depending on the size of your cup/amount of mixture cooking, it will probably take another 30 seconds to one minute more.  Do any additional cooking in 15 second increments, checking after each time.  Once it is cooked through and completely cooked/solid in the center, serve as is ~ or with an extra splash of eggnog or milk.

Variations to the Basic ~  Eggnog Bread Pudding

Pumpkin-White Chocolate Eggnog Bread Pudding
to the original recipe ~ add/change out ~ **  


  • add  ~  1 Tbsp pure pumpkin puree
  • add  ~  1 tsp white chocolate chips
  • exchange  ~  the raisins for an equal amount of dried cranberries 
**this one will take a bit longer to cook because of the pumpkin puree ~ add an extra 15 seconds at a time, until it is firm in the middle and cooked through (mine took 2 minutes total)


Chocolate Chip Eggnog Bread Pudding
to the original recipe ~ add ~ **


  • 1 tsp cocoa powder
  • 1 tsp sugar
  • 1 tsp chocolate chips or carob chips


Homemade Chicken & Dumplings ~ just like Grandma & Cracker Barrel make!

Homemade Chicken & Dumplings ~ Honestly one of the easiest and most satisfying homestyle meals I've ever made.  Why has it taken me so long to discover this classic recipe?  The traditional 'noodle-style' dumplings are so different from the biscuit dumplings I normally make.  Two versions of the same meal & both outstanding!

I found this amazing sounding recipe for making old fashioned ~ Homemade Chicken & Dumplings.  It said it was easy to make, quick to get to the dinner table & that it tastes like the Cracker Barrel version.  Ooooo, that got my attention.  I just love Cracker Barrel's Chicken & Dumplings!



I made it for our dinner & was truly impressed, as was my entire family.  Using leftover chicken makes this recipe so easy.  Not much to it ~ flour, broth, cooked chicken & a couple of spoonfuls of other on-hand pantry ingredients.  Even though the ingredient list is small, the flavor is BIG & so very comforting!  The recipe is simple to follow, quick to get to the dinner table & is just as good (if not better) than the one I've ordered countless times at my favorite 'country-style' restaurant.  We demolished the first batch I made and I've had requests to make it again ~ soon, very, very soon.  It was THAT good.



So, if you're looking for a meal that tastes like ~ something your grandma might make... that is comforting & makes you think of simpler times, when food wasn't fancy ~ just rustic, flavorful & perfect for large or small gatherings... just everyone sitting around the kitchen table, enjoying each others company... or when you'd like to order chicken & dumplings in your favorite 'country-style' restaurant, but want to make it cheaper at home, using leftover chicken & few other ingredients... or maybe even for a potluck ~ consider giving this recipe a try.  I think you'll be glad you did.  :)

P.S. ~ Since I'm posting this after Thanksgiving, I was thinking this might be a perfect way to use up some of the leftover turkey we all have hanging around the fridge.  Same meal / preparation, just a different type of bird...  I think I'll be making this again, just turning it into ~ Homemade Turkey & Dumplings ~ the next time around.  Maybe throw in a few frozen peas/carrots. Or maybe not.  Depends on my mood. : )



Quick English Muffin Pizza

Quick English Muffin Pizza ~ this is a favorite in our house.  It's perfect for when you have to have a meal on the table quick & nothing but pizza will do.  Great for kids & grown-up kids, alike.  :)

J really likes his pizza, but sometimes we don't have the time to bake one from the freezer ~ especially when he wants to eat now!  Waiting for the oven to warm up & then waiting for the pizza to bake, just will not do!  For times like this, I'll often make a Quick English Muffin Pizza.  J just can't resist helping to make his own personal sized pizzas & who can blame him.  It's fun.

I always keep some leftover spaghetti sauce in the freezer, in small bags, just for these occasions.  I'll thaw it out & use it as the 'pizza sauce', giving the split English muffin a thick coating of sauce.  Anything that's in the fridge is fair game as far as the toppings go.  In this picture, I used some leftover, cooked ground beef, with a bit of Italian herbs & some Parmesan cheese.  Just give it a quick spin in the microwave & pizza is served!


Easy Chili Mac Soup

Easy Chili Mac Soup ~ This family favorite is easy to make and if you have leftover macaroni & cheese already made up ~ it's a great way to clean out the fridge, too.  :)

Grandma Bunni used to LOVE eating Chili Mac Soup.  It was one of her favorite soups to make & as she got older, one of her favorites to order when she went out for dinner.  Since I had sooo much left over Macaroni & Cheese from a recent meal I made (read the post on that meal here), I decided to make a big ol' pot of Chili Mac Soup with the leftovers.  J was VERY enthusiastic when I made this & he declared it his very favorite soup of all-time!  Grandma Bunni would have been so pleased ~ I can see the apple didn't fall far from the tree on that one.   :)  Enjoy!

Easy Chili Mac Soup ~ a favorite soup of Grandma Bunni :)
makes a big ol' pot

Ingredients
  • 1 pound lean hamburger, cooked, drained & crumbled
  • 1 28 oz. can crushed tomatoes, with juice
  • 1 14 oz. can diced tomatoes, with juice
  • 1 can chili beans, with/in sauce
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 1 garlic clove, minced
  • 1 packet taco seasoning mix
  • 4 cups precooked elbow macaroni (or leftover macaroni & cheese, like from this recipe)
  • salt & pepper, to taste
Directions

Place first 8 ingredients in a large pot, stir well & bring to a boil.  Reduce heat & simmer for about 15-20 minutes, or until the onion & green pepper are tender.  Add a little extra water if it gets too thick.

Add the precooked elbow macaroni & gently stir to combine.  Simmer all together for an additional 5 minutes.  Add salt & pepper, as desired. 

Serve as-is or with your favorite toppings and/or sides.  Some of our favorite extras are ~ shredded cheese; crushed tortilla chips; sour cream; crackers; corn bread.


Marinated Pork Tenderloin ~ perfect for easy & elegant dinners

Whole Oven Roasted Thai Marinated Pork Tenderloin ~ Getting pre-marinated pork tenderloin at the market takes all the hassle out of making this tender & low fat cut of meat.  There are many different marinated flavors to choose from ~ the hardest part is trying to decide what flavor you'd like to try.  :)


For an easy dinner that's simple to prepare, yet nice enough for company, I often turn to marinated pork tenderloins.  I purchase the pre-marinated ones at the store, but you could easily marinate it at home.  I like the convenience of having it already done for me, just one less thing to have to worry about on a busy night.  Sometimes I roast the entire tenderloin in the oven.  If I'm roasting it, I just follow the simple directions on the package for getting the tenderloin into the oven & in about the time it takes me to get all the side dishes ready, maybe help out with homework & maybe have a cup of tea ~ dinner is about ready to get on the table.  It's all pretty low-key, but it tastes like you went to a lot of trouble ~ I like it when something easy makes me look so good!  heehee


BBQ Mesquite Marinated Pork Tenderloin Medallions ~ I slice the raw tenderloin into 'medallions' for even quicker cooking.  Since they're sliced thin, it takes just a few minutes to cook.  If you have any leftover rice, combine it with some frozen mixed veg & you've got a simple side dish, add another veg & dinner is served.
 

Sometimes I slice the raw tenderloin into 'medallions' when I want dinner on the table even quicker.  I'll either cook them on the George Foreman Grill, or saute them in a skillet.  Dress it up for an elegant dinner or keep it simple for a weeknight meal, it's all good!  Any leftovers are perfect served the next day, either in ~ sandwiches at lunchtime or as a stir fry for dinner.  Not only is this a really easy cut of meat to cook (you can even grill it on the BBQ), it's tasty & really low in fat ~ no wonder I like this cut of meat so much!   :)


Leftover Pork Stir Fry ~ Grab some leftover marinated pork tenderloin, cut it into cubes & stir fry it with your favorite stir fry sauce, veggies and maybe even some chunks of tropical fruit.  Then serve it over rice & sprinkle with some nuts.  A quick & simple dinner for any night of the week. 


Spaghetti Pie Casserole ~ getting creative with leftovers


I had a bunch of spaghetti left over one night & knew I had to spruce it up for the next go-around.  I remembered Grandma Bunni used to make something she called her special ~ Spaghetti Pie Casserole ~ whenever she had an abundance of leftover pasta, so I decided to follow suit.  She always threw things in in layers ~ like shredded cheese, cooked spinach or veggies, ricotta or Parmesan cheeses, or maybe even some sour cream mixed with chopped green onions & then she topped it all with another layer of cheese.  Of course, back then she used all full-fat ingredients, I don't think they knew what reduced calorie or low-fat was back then. (ah, the good old days ~ heehee)  Looking back, I never knew I was enjoying leftovers, to me it was just having her special ~ Spaghetti Pie Casserole.  And as I remember it, there were never any leftovers.  :)



For my rendition, I layered the already spaghetti sauced-tossed pasta (I dare you to say that, fast, 3 times :) with some low fat shredded mozzarella & low fat ricotta, threw in some cooked zucchini, along with some fresh basil, chopped green onions & some extra Italian spices.  I topped it all with grated Parmesan & low fat shredded cheese blend ~ then baked it in the oven until it was all hot & bubbly. I added a salad & garlic bread and dinner was served.

It really is a tasty enough dish to make it on purpose, not just to be used as a vehicle for leftover spaghetti.  So, if you want to try making it from scratch, here is a recipe that sounds like it would be really good & popular with both grownups, as well as with kids.  Buon Appetito! 

Spaghetti Tacos & Spaghetti Nachos ~ iKidding around in the kitchen...


Spaghetti Tacos & Spaghetti Nachos ~ Yeah, right, a meal made from spaghetti & tacos shells ~ t.o.g.e.t.h.e.r??  Who knew there was such a thing?  Turns out, A TON of people know about this dish, especially if you're a Tween & watch iCarley.  Since I have a son, ((who is not a Tween)), who has never seen that show ((me neither)) I had no idea such a thing existed.  I just learned about it while surfing the Internet, innocently looking for new recipes using leftover spaghetti.  ((I had some leftover spaghetti, from when I made my brother's recipe, Mike's Homemade Spaghetti Sauce))  I was shocked to read so many compliments for the Spaghetti Taco recipe.  The NY Times has even written quite the article to explain the phenomenon...AND there are TONS of videos on YouTube of this crazy dinner dish.  As I said before...Who knew??   This is what I found on YouTube from the actual show...




There is even a recipe for a lower calorie version from the Hungry Girl site...  Well, if she can make them, I guess they can't be too bad...

I was skeptical, to say the least, but I do like to get creative with my leftovers, so I decided to give this dish a try.  Happy to report, they really do make a perfect match.  Spaghetti  + Tacos = 1 Happy Kid/Mom!  It's a cheap & cheerful meal, especially if you are using up leftovers.  Another great thing about them is you get Cool Mom Bonus Points for making them.  Alright!  J loved them & actually, so did I.  In a pinch you could even used canned spaghetti & heat the tacos in the microwave.  Dinner on the table in 5 minutes, too cool!


We even came up with our own spin, we made Spaghetti Nachos.  Some of the taco shells were cracked, so we just topped them with spaghetti, shredded cheese & heated them in the oven until the cheese melted.  I think we even liked it better that way.  After all of this, maybe we'll even catch a rerun of the show or maybe next time we make Spaghetti Tacos or Spaghetti Nachos we'll even save some for Dad to try....just maybe.  :)

Hunters Chicken ~ Chicken Chasseur



Hunters Chicken ~ In France, this dish goes by the name of ~ Chicken Chasseur.  I made the sauce really quickly using Bisto Chicken Gravy for the base, 1/2 can of chopped fire roasted stewed tomatoes, a small can of sliced mushrooms, a little diced onion, a few herbs & a splash of sherry. (or you could use your favorite cooking alcohol)

If you don't have Bisto Gravy to make the sauce with, you could just combine a jar of brown gravy & a jar of chicken gravy ~ then add the other ingredients & simmer all together until warmed through.  Add your already cooked chicken & let it all simmer together for a few minutes, then dish it up & eat.  This is a great meal to make if you have leftover chicken (pieces or slices) hanging around the fridge.  It's also nice enough to serve for dinner when you have company over, but no need to wait for a special occasion.  You could easily use fresh ingredients, instead of canned, but the sauce will need to be simmered longer before you add the cooked chicken.  This French inspired recipe is a versatile, quick & easy meal that is cheap & cheerful, too.

S & B Golden Curry Mix ~ a quick & easy meal, ready in minutes



S&B Golden Curry Mix ~ This is the BEST Curry Mix there is!!  I've been a huge fan of this Japanese brand since the 1980's. It's so versatile, just add your favorite meat/veg, simmer for a few minutes, serve over cooked rice & just like that ~ you've got dinner.  This curry mix base is also perfect for using up any leftovers you have in the fridge, cheap & cheerful at it's best.  It comes in mild, medium-hot & hot ~ I usually use medium-hot or a 50/50 mix or mild & medium-hot.  It has a similar flavor to Indian curry, but different at the same time, it's addicting.  :)

When I worked in downtown L.A., I would go to some little restaurants in J-Town, many of them used it & I got hooked.  If your regular market doesn't carry it, you can order it on Amazon or try looking for it in an Asian Market, that's were I found it here.

Quick Rice Pudding & Bread Pudding ~ turning leftovers into a sweet ending to your meal

I always try to use up all of the food leftover from our meals, I just hate having to throw away food!  Usually I'll turn any odds & ends into soup, but occasionally, I'll create desserts out of them.  Either way, savory or sweet, those leftovers get one last hurrah.  Like Grandma Bunni always said ~ Waste not, want not. :) 

Quick & Easy Rice Pudding ~ Ever have just a bit of rice left over & nowhere to use it? Turn it into rice pudding using a vanilla pudding mix (use instant or regular, w/sugar or w/o, it's very versatile).  In a medium sauce pan add the milk, leftover rice, some raisins & a little cinnamon ~ simmer all together for about 10 minutes.  Let the mixture cool a bit, then add the pudding mix & stir well. Eat the rice pudding hot or cold. I sometimes add coconut extract & cardamom for an Indian flavor.

Bread Pudding ~ This is a great way to use up leftover stale bread ~ I guess that's how it also got the name 'poor man's pudding'.  This is one of our go-to comfort foods, we really enjoy this dessert.  We'll eat it either hot or cold & sometimes we'll even have it for breakfast.  Roy usually pours a bit of milk over the top ~ that's just the way he rolls.  :)  Check out this recipe for a light version of bread pudding, over at Food.com 



















Middle Eastern Salads & Spreads ~ so much fresh flavor


I really enjoy making & eating Middle Eastern salads & dishes.  I usually make them just for me since my guys are not as enthusiastic as I am when it comes to all the whole grain, garlicky, fresh green herb, olive oil goodness that is so much a part of these dishes.  No matter, I make them for myself & enjoy them fully ~ either as a stand alone dish or as a side dish.  Sometimes, I will have just a little bit of this & some of that, left in the fridge.  When I do,  I can then make a Meze Platter, it's the perfect way to clean out the fridge & have a nice meal.  With the addition of a few nuts & some pita bread, I'm in heaven.  Who says cooking for one is boring?  Certainly not me!   Enjoy!

Baba Ghanoush ~ Every time I make this, it reminds me of a bit they did on the TV show  "Mad About You", involving a garlicky, baba ghanoush kiss. It always makes me smile.  :)

Tabouli ~ I love making this salad when I have fresh veggies/herbs available from our garden, can't get fresher than that. This is one of my favorite summer salads.

Meze Platter ~ What a great way to use up odds & ends from the fridge.  Presenting it this way turns leftovers into something special. When I made it this time, I stuffed a tomato with herbed couscous, added some nuts, a refreshing cucumber yogurt tzatziki, tabouli & baba ghanoush.   Serve with a pita, for scooping up all that taste pleasure & you've got a splendid meal.

Garbanzo Bean & Carrot Hummus ~  I wrote about this dish a few months ago.  It would be a nice addition to any meal or party.  Adding pureed carrots to the garbanzo bean mixture really lightens/brightens it up ~ a nice twist in the calorie, color & flavor departments.

Simple Chinese Meals ~ So easy to cook Asian food at home...

Sometimes, I feel like having some Chinese food.  Sometimes, I want to go out to the local Chinese restaurant & enjoy their vast lunch buffet.  Sometimes, I just want to stay home & have some quick & easy Chinese food that I make myself.  On those days, this is what you might find cooking in my kitchen.  Not having a certain ingredient will ever stop me from making a dish, I just improvise with what I have on hand.  It's the only way to cook when you have a craving.  :)

Hot and Sour Soup ~ When Roy is sick, I like to made him some homemade soup.  He really enjoys Hot & Sour Soup at the Chinese restaurant ~ whether he has a cold, or not.  Last time he was ill, I found a recipe for the soup in The Joy of Cooking cookbook & improvised with what I had on hand. It turned out really good!

Double Mushroom Miso Soup & Sesame Broccoli ~ I saw this post (for these two recipes, making one meal) on Facebook, ~ from the blog,  Fat Free Vegan.  I had all the ingredients, so I made it for my lunch that same day. Very tasty.  I wonder sometimes if I have too many items/ingredients in my pantry/fridge...Nah. :) ~ 

  Udon Noodles ~ I know these are Japanese noodles, but they have similar noodles in China, so I'm taking the liberty to include them in this post.  (I hope no one minds :)  I love cooking with these noodles, they are so quick & easy. They make a fantastic presentation & are a great way to use up any leftovers you might have in the fridge.  I make both  hot & cold dishes with these tasty noodles. So versatile!

Sweet & Sour Pork ~ Roy & I had the munchies late one night & he decided to cook.  I had some leftover pork chops/rice & he made this REALLY good meal in no time flat. Bottled Sweet & Sour Sauce is such a quick way to make this meal.  He threw in some canned tropical fruit & frozen bell pepper strips.  Literally, 15 minutes from start to finish.  I love it when we have just the right ingredients all ready to go in the fridge.

Chinese Chicken Salad with Almonds, Ramen Noodles & Oranges ~ I love making this dish with shredded cabbage or even using coleslaw mix (to make it faster to create).  It travels well, keeps a perfect crunch & is great for potlucks & family get togethers.  I have been making it for years!

Just change up the presentation a little bit & the Chinese Chicken Salad can look elegant.  Who knew ramen noodles could look so sophisticated?

Easy Homemade Indian Food Feast


I love eating & cooking Indian food.  I also really enjoy going to Indian restaurant buffets.  It's such a great way to try out different dishes.   Here are some simple Indian recipes I make at home, they are not too complicated and they really satisfy.  J really LOVES the saag paneer with naan bread.  I like to use Trader Joe's Garlic Naan bread, it's the best!

Saag Paneer w/Naan Bread ~ This is the Indian version of creamed spinach. You can make it with or w/o yogurt or cream. This time I just added yogurt to the top & used firm tofu cubes since I didn't have any paneer. Cream of Wheat Pudding (inspired by the Indian dessert ~ Halva) ~ There is a warm, Indian 'cream of wheat' dessert called Halva & it's a homestyle comfort food as well as a staple at many Indian restaurant buffets. This is my chilled spin of the dessert.


Chilled Cream of Wheat Dessert ~ inspired by the Indian dessert Halva                

1 1/2 cup      leftover cooked cream of wheat
2 tblsp          raisins
1/8 tsp          cardamon
1/4 cup         hot water
3                   Equal packets

~                   milk & whipped cream

1)     soak raisins in hot water for 5 minutes

2)     in medium bowl ~ mix together cardamon, Equal & cream of wheat,
        then add the raisins & remaining water

3)    stir well & chill for 4 hours, turn out & slice or spoon into serving dish

4)    serve with milk & top with whipped cream

Salads, salads, everywhere!


Sorta Nicoise Tuna Salad - No potatoes & the olives are blended into the dressing. Fat Flush Diet friendly. Big salads are so good & pretty, too.

I started this food blog last December because my Facebook food photo albums had almost 200(!) dish/meal photos in them.  A bit excessive, right?  Yeah, I thought so, too.   Seems I had started this food blog over on Facebook first...I just didn't know it at the time.

Now that I've been doing blogging for five months, I've found that I'm having even more fun in the kitchen ~ searching for recipes to write about, then cooking the dishes & finally photographing them.  I continue to rack up photos at an alarming rate!  The problem I'm running into is that I still have a bunch (actually, bunches & bunches) of my original photos that still haven't made their appearance on the blog yet...  What's a cook, who gets 'happy' with her point & shoot camera, to do???

Well, today I am going to let the remaining photos of my green salads have their 15 minutes of fame.  I have to ~ summer is right around the corner & a whole new batch of leafy green bowls of goodness are just waiting to be created & photographed.  So, I've decided to have a 'pre-summer salad clearance'.  Everything must go!  :)  Enjoy!

Chef Salad ~ When it gets hot, we start having a lot of salads. Even J enjoys eating his greens. It's nice to be able to add some of our own homegrown veggies to our salads.



Wedge Salad ~ Every time I make these, I wonder why I don't do it more often. They really do eat like a meal. They are SO much cheaper to make at home and you can dress them any way you like. Shame on restaurants who charge $5+ for one of these.


Ginormous Salad w/French Herbs & Tuna - (this photo/salad/comment was made when I was on the Fat Flush Diet 06/2011) Yes, this HUGE salad was my late lunch/dinner. I got a bit happy adding all the veggies, oops. It took a while to finish. I still can't believe I can eat this much food and lose weight. I had no idea getting rid of white carbs would have such an impact. Where has this diet been all my life?



Lettuce, Heart of the Core ~ This is a little treat, just for me, when I get to the end of the lettuce. I cut away all the sides & end of the part of the lettuce you normally throw out. After you trim it all away, you are left with just the 'heart of the core' of the lettuce. (see before trimming & after) Sprinkle a little salt on it & you have a crunchy tidbit, just enough for one. Waste not, want not. :)


Homemade Croutons ~ J has a thing about eating crusts on his sandwiches.  Sometimes he will & sometimes he won't.  I hate to throw them out on the days 'he won't', so I keep the leftover crusts I cut off, in a bag, in the freezer.  When I get enough of them, I thaw them out, toss them with some olive oil/spices, and then I toast them in a skillet until they are crispy & golden.  We then eat them on salads or just as munchies.  Waste not, want not.  :)

Pan Sauteed Wilted Lettuce ~ I had some romaine lettuce get a bit too cold in the fridge & it wilted. I just had to try & salvage it. I found this recipe & it was really tasty. The flavor reminded me of bok choy & this could easily stand in for it in a recipe. I added walnuts & a bit of Braggs, excellent!


Sauteed Dandelion Greens with Peaches & Walnuts - (I made this last year, before we became seasoned, backyard dandelion foragers) This is what happens when you go shopping at Whole Foods. You come home with interesting veggies. J wanted me buy them, so I did. He had some tonight, raw, in his salad. I did too, but I sauteed mine with some spices, onions, peaches & walnuts.  Gotta love a kid who will eat dandelions!
