Ruby Red Fresh Fruit & Veggie Juice ~ Two Ways



I'm still on the fresh juice kick.  This time I tried making it with a beet.  What a deep, red color that one little beet gave the juice!  I tried it two ways ~ just the juice...and then the fresh juice blended with the leftover pulp, a couple of other goodies and then some protein powder.  I liked it both ways.  I'm sold on having beets in my juice, I'll have to use them in my fresh juices more often.   :)

Ruby Red Fresh Fruit & Veggie Juice ~ Two Ways
serves 1~2

Ingredients
  • 1 apple, seeds removed
  • 1 carrot
  • 1 small red beet
  • 1 celery stalk
  • 3 kale leaves, with stems
  • 1 handful of spinach
  • 1/4 Meyer lemon, seeds removed
  • 1/2 inch slice of ginger
Directions
To make the Fresh Juice version:
Process all the fruit/veggies through the juicer.  Enjoy!
 
 ~ Include the following for the optional High Protein-Fiber version ~
  • 1~ 2 cups water (depending on amount of leftover fiber you use)
  • one scoop vanilla protein powder
  • 1/2 Tbsp ground flax seed (optional)
  • 1/2 Tbsp chia seeds (optional)
  • leftover fiber from juicer ~ use as much as you like
  • 3 ice cubes
  • stevia or other sweetener, to taste (optional)

To make the High Protein-Fiber version:  Once the fruit/veggies are juiced ~ add the fresh juice to a blender.  Add remaining ingredients and blend on high until nice and smooth.  Add more or less water, depending on the amount of leftover fiber you added to the blender.  Serve over ice, if desired.



High Protein-Fresh Golden Juice Smoothie



I'm enjoying adding some protein powder to my fresh made veggie/fruit juices.  Adding the vanilla protein powder, banana and ice cubes gives the juice combo a whole new creamier, dreamier dimension. This time I skipped most of the greens and went mostly for the gold.  I'm racking it up to all this Olympic gold fever!   heehee  :)

High Protein-Fresh Golden Juice Smoothie
serves 1~2

Ingredients
  • 2 carrots
  • 1 peeled orange, seeds removed
  • 1 apple, seeds removed (maybe even a golden delicious :)
  • 1 celery stalk
  • 1 slice Meyer lemon, seeds removed
  • 1/2 inch fresh ginger slice
  • few sprigs fresh parsley
  • 1 scoop vanilla protein powder
  • 1/2 banana
  • 4 ice cubes
  • 1/2 tsp ground cinnamon
  • few drops of liquid stevia or sweetener of choice
  • 1/3 of the remaining leftover pulp ~ (if desired)
  • extra water to thin (optional)
Directions
Prep all fruit/veggies. Run the first 7 fruit/veggies through the juicer. (NOT the banana yet...trust me on this one :)  Pour fresh juice into a blender.  Add about 1/3 of the remaining veggie/fruit pulp (to get more of the goodness of the fiber in your drink ~ if desired) and then add the remaining ingredients.  (OK...NOW add the banana)  Blend on high until it becomes smooth & frosty. Add a little water, if needed, to get your juice to the consistency you like.  Enjoy!

Deep Green 'Full-of-Fiber' Fruit & Veggie Juice ~ how I make fresh juice with all the fiber...without having a Vitamix blender



I've been enjoying making fresh juice in my Hamilton Beach Big Mouth Juicer for some time now.  I've shared some of those recipes on the blog,  as well as ways I use up the leftover pulp.  Waste not, want not.  If I had a Vitamix blender this wouldn't be an issue, it can turn all of the fruit and veggies into juice...with no leftover pulp at all.  But, since I don't have one, I decided to see if I could reincorporate the pulp back into the juice by using my blender after juicing. Happy to report ~ it works!!  

It might not be quite as smooth as a Vitamix created glass of juice, but for me it works out just fine...and there's no $400-$500 hit to my budget.  :)  The juice can be as thick or thin as you like, just add as much water or apple juice as you want. This is how I created the deep green beauty shown above...

Deep Green 'Full-of-Fiber' Fruit & Veggie Juice
~ made without a Vitamix blender
serves one

Ingredients
  • 1 small apple, seeds removed
  • 1 medium carrot
  • 1 celery stick
  • 1 handful washed spinach
  • 2 kale leaves with stems
  • 1/4 Meyer lemon, cut into slices, seeds removed
  • 1 'coin' slice of fresh ginger (or more, to taste)
  • 1 cup (or more) of cold water (or bottled apple juice)
  • stevia, maple syrup, or you favorite sweetener ~ optional
  • ice cubes
Directions
Process all fruit/veggies through the juicer.  Pour juice into the blender.  Take all (or less, your call) of the leftover fiber out of the juicer and add to the blender.  Add a cup of water (or apple juice) and blend on 'puree' (or highest setting) for a minute or until as smooth as it can get.  Add additional water/juice, if desired, to get the juice to a consistency you like.  Taste and add a little sweetener if needed/desired.  Serve fiber blended juice over ice.  Enjoy!
 

Vitamin C Zing ~ fresh from the juicer, with oranges & ginger




I enjoy playing around with my Hamilton Beach juicer.  This recipe from their manual is quick, simple, easy and great tasting.  That little bit of ginger really wakes up my morning orange juice. (maybe I'll try it using tangerines next time they go on sale)  Hello, liquid sunshine!

Vitamin C Zing

Ingredients
  • 3 juice oranges, peeled
  • 1/8" slice of peeled ginger (or more if you like the spicy taste ~ I do!)
Directions
Push all ingredients down the shoot to enjoy your frothy breakfast beverage!


Fresh from the Juicer ~ For Your Eyes Only ~ fruit/veggie juice blend & a Quick Hummus using the leftover Juicer Pulp

  • 1 pear
  • 1/2 squash

For a little extra treat, sometimes I'll use the leftover pulp from the juicer to make a simple dip.  One of my favorites to make is a Quick Hummus with Juicer Pulp.  Super easy to make, all I do is throw into my food processor ~ one can of drained/rinsed garbanzo beans, a spoonful of nut butter, a squeeze of lemon/lime juice, the leftover juicer pulp and some spices/salt/pepper.  Then I ~ give it a whirl, spoon into a bowl, drizzle with a little EVOO, sprinkle on some paprika and serve.  I like to eat it with ~ assorted cut-up veggies, crackers, pita bread or as a sandwich spread.  It's really tasty and full of all the extra good fiber left over from making the juice.  Waste not, want not!

Easy & Tasty Uses for Juicer Pulp...

As I've been making fresh juices with my juicer, I've been left with the remains of the fruit and veggies that have been gone into their creations.  I always like to use up the juicer pulp if I can, it's so full of all that good fiber.  Here are some of the ways that I've been able to enhance a few of the things that we enjoy eating...

Juicer Pulped-Up Orange Marmalade ~ When I make fresh orange juice in the juicer, I make sure to remove the seeds before I throw in the peeled oranges.  I finely chop the orange pulp and mix it into an amount of orange marmalade that I can use-up in a day or two.  We really enjoy the sweet/tart flavor of this pulped-up marmalade.

Juicer Pulped-Up Greek Yogurt ~ When I have a fruit juice combo that seems like it would be good match, I'll stir it into my yogurt, along with some ground flax, honey and walnuts for a bulked-up, satisfying snack.  This one was made with the red grape/lime juice blend ~ Sour Grapes.

Juicer Pulped-Up Salsa ~ To make this quick and tasty salsa, I mix veggie juicer pulp into my favorite salsa.  Super simple way to get more fiber into one of our favorite snacks.  This one was made with the juice blend ~ Healthy Woman.  I've also made it with the juice blend ~ Liquid Fire. 

Juicer Pulped-Up Oatmeal Veggie 'Bisque' Soup ~ I found this recipe for an easy and unique 'bisque' soup for one, using Better Than Bouillon and oatmeal.  I use chicken instead of lobster bouillon and to up the fiber, I add a veggie pulp blend.  This time  I made it with the juicer pulp ~ vitAmin.

Ingredients

  • 2 broccoli florets with stalk
  • 1/4 green pepper
  • 1 celery stalk
  • 1 carrot
  • 1 tomato
  • hot pepper sauce
  • spicy salt/creole spice blend

Directions


Cut veggies into chunks that will fit into your juicer, shove the chunks down the chute & juice away. 

Season juice with hot pepper sauce and/or spicy salt blend ~ as desired.

Serve straight-up or over ice.

~~  This tastes like a lighter version of Spicy V8 Juice, it's really good!  Hmmm, might make a good Bloody Mary...  :)  ~~

Mean Green Juice ~ Meatless Monday

Mean Green Juice ~ from the movie Fat, Sick and Nearly Dead.


I'd been looking for juicer recipes that included the superfood ~ kale ~ when I came across tons of posts that talked about the documentary movie ~ Fat, Sick and Nearly Dead.  I remembered hearing about the documentary, but had never seen it.  I was intrigued & read a couple of the blogs.  Then I headed on over to the ReBoot With Joe site & looked around.  If you haven't seen the movie yet, I highly recommend it.  (you can watch it over on Hulu ~ if you're in the US)   Wow!  What an amazing journey Joe & Phil went through!  Certainly a lot of food for thought. (no pun intended ~ OK, pun intended :)

I made the signature ~ Mean Green Juice ~ and really enjoyed it.   It'll become a regular in my juicer recipe rotation.  Watch the movie & see for yourself how much these guys (and others who's stories where told) benefited from their juicing journey.  Very inspiring, indeed!   Good on ya, mate!

Mean Green Juice 

recipe adapted very slightly from the ReBoot With Joe site

Ingredients

  • 6 Kale Leaves
  • 1 Cucumber
  • 4 Celery Stalks
  • 2 Green Apples
  • 1/2 Lemon, peeled
  • 1"-2" piece of peeled ginger, depends on how spicy you like your juice
Directions

Feed your fruit & veggies down the shoot of your juicer & juice away!

Fresh Carrot-Apple Juice with Ginger


Lately, I've been enjoying playing around in my kitchen ~ with my juicer. There is something so satisfying about shoving all those fruits & veggies down the chute and watching the glass fill up with liquid nectar.  I'm having so much fun, that even cleaning the juicer doesn't bother me.  Yup, I'm a kitchen geek!

I was pleasantly surprised when I made this super simple juice ~ Carrot-Apple Juice with Ginger.  The thing that surprised me was how much I love including a slice (or two) of fresh ginger with the other ingredients.  The ginger's flavor is subtle, but it brightens up & immensely improves the over-all taste of every juice recipe I've added it to.  I'm hooked & think I'll be including a few slices of ginger to all my juicer drink recipes now.  :)


Fresh Carrot-Apple Juice with Ginger
serves one

Ingredients

  • 2 carrots
  • 1 apple
  • 2 slices ~ fresh, peeled ginger 'coins' ~ 1/8 inch slices (more or less, to taste)

Directions

Cut carrots & apple into chunks that will fit into your juicer.  Shove the chunks, along with the ginger slice(s), down the chute & juice away.

Serve straight-up or over ice.

Fresh Cucumber-Apple Juice



My friend, Luciane, told me about a simple fruit & veggie drink that she makes with her juicer ~ Fresh Cucumber-Apple Juice.  Her kids are just crazy about it AND it's as easy as can be to make ~ just cucumbers & apples.  Cool!  I was intrigued & decided to make it this morning for my breakfast drink.

I now know why she & her kids like this combo so much.  It's so light & refreshing, just perfect for these hot, end-of-summer days.  Cucumbers are plentiful right now, so this is the perfect time to try this in your kitchen.  Use your favorite variety of apples & if you can, organic would be a nice choice since you are juicing the cucumbers & apples with their skins on.  Whatever produce I throw in my juicer, I always give it a fruit & veggie wash 'bath' before juicing, just to make sure there is no 'produce wax' left on the skins.

Here's an interesting, little bit of info for you ~ a cucumber is technically a fruit & not a veggie.  Since the seed is enclosed inside the flesh & the cucumber develops from a flower, it's a fruit.  Ask a botanist  ~ it's a fruit.  Ask a cook ~ it's a veggie.  Who, knew?  Since I'm a cook, it's a veggie to me & always will be.  :)

Fresh Cucumber-Apple Juice
serves one ~ two



  • one cucumber ~ well washed
  • one apple ~ well washed  
Cut cucumber & apple into chunks that will fit into your juicer, shove the chunks down the chute & juice away.

Serve straight-up or over ice.

Optional ~ if you want it a tad sweeter, just add another apple down the juicer chute... or stir in a touch of honey or a sprinkle of stevia.

Carrot Cake ~ February 3rd is National Carrot Cake Day ~ what a fun way to eat your veggies!

Spiced Carrot Cake
Today, February 3rd, is National Carrot Cake Day.  So, in honor of today's special vegetable playing dress-up as a cake, I am going to share my Spiced Carrot Cake recipe.  I created it one evening last year, when I had A LOT of carrot pulp left over from a day of juicing, a quiet night to myself & a late night case of the munchies

I surfed around the net & found a recipe, that with some changes, would fit the bill.  I had to change it up some to work with the ingredients I had available.  I added some additional things to add more flavor & replaced some of the oil, with applesauce, to make it a bit lower in fat.

It was a great success & I make it when ever I juice carrots. I just hate to waste the pulp, it is so good for you.  It is such a creative way to use up something that still has so much flavor, vitamins & goodness to share.  Bugs Bunny would be so pleased!

Spiced Carrot Cake
(using carrot pulp from your juicer)

5 to 8 carrots, or enough to produce 1-1/2 cups carrot pulp and 1/2 cup carrot juice 
1 cup flour
1 cup granulated sugar
2 eggs
1/2 cup oil

1/4 cup applesauce
1/2 cup chopped toasted walnuts

1/2 cup flaked coconut (optional)
3/4 cup raisins
2 tsp cinnamon

1/4 tsp nutmeg
1/4 tsp allspice
1/4 tsp ground ginger
1-1/2 tsp baking powder
1/2 tsp salt
2 tsp vanilla

Directions
:
Preheat Oven to 350

Process carrots in juice extractor to produce pulp and carrot juice.

Mix flour, baking powder, spices and salt together and set aside. Toss raisins in a little of the flour mixture, coat thoroughly and set aside.  Combine eggs, sugar, vanilla, applesauce and oil in medium bowl. Add flour mixture alternately with pulp and carrot juice. Add chopped nuts, coconut & raisins; stir to combine. Pour into well-greased bundt pan; bake 35-40 minutes or until tester comes out clean.

Let cake cool a few minutes, than turn out to cool on a cake rack. Sprinkle with powdered sugar before serving.

** I originally posted this recipe on 12/9/11, not realizing there was a National Carrot Cake Day.  Oops, took the cake out of the oven too soon, so to speak, should have left it for today.  So, I thought I would post it again, with a new text.  Since that was one of my first blog posts, I didn't really realize how important the title of a post was. Waste Not, Want Not ~ sounded great in theory, horrible choice in practice. Live & learn.  :)

For better or worse, I too, have that philosophy.  I just hate to waste things, or food, that can still be of use.  When I got a juicer earlier this year, I was so excited, there is just something so right about a  glass of homemade fresh juice. Here are some pictures of one of my play dates with my juicer...

3/25 ~ I appear to be channeling my inner California girl, I am on a fresh food kick right now. I got a great deal on juice oranges, so out came the juicer. Fresh OJ, so frothy it tastes like an Orange Julius if you drink it right away. J REALLY likes it. We then made carrot juice. He was resistant at first, then came around. His favorite was adding banana & orange, together in the chute, for his own concoction. I am making Juicer Pulp Spiced Carrot Cake with the leftover pulp right now. Sunshine has this happy effect on me. I need more of it. The weather today made me feel like I was back home in Cali. :)

 
Oh, the drinks I made those first days. I was a fiend, feeding fruits & veggies into the chute with a vengeance.  Even J got into the act, he loved shoving apples/oranges into it & watching them disappear.  Fresh juice abounded...as well as a small large, growing, mound of pulp.  All those good vitamins & fiber just couldn't be thrown out, they were just begging to be used.   What to do with all the carrot & fruit pulp that was left behind?  I surfed around the net for a bit & found the perfect recipe. Like I've said before, I am a challenged baker, but this bundt cake turned out SO GOOD! It is now  my 'Go To' recipe whenever I have pulp left over from a juicing binge!

Here is my recipe, inspired by the post from yardenxanthe. Mine has applesauce replacing some of the oil, more spices & the addition of raisins & coconut. These also make great muffins!


Juicer Pulp Spiced Carrot Cake
