Key Lime Cream Pie with No-Bake Graham Cracker Pie Crust ~ Easy & Low-Fat


Easy Low-Fat Key Lime Cream Pie with Homemade No-Bake Graham Cracker Pie Crust ~ this simple to make, low-fat pie gets it creamy taste from Fat-Free Cool Whip & Fat-Free Sweetened Condensed Milk.  The homemade, no-bake graham cracker pie crust takes just minutes to make.  The whole pie is so easy to prepare, the hardest part is waiting for it to chill. :)

As long as I can remember, I've been a fan of Key Lime Pie ~ either a traditional slice, topped with meringue or one of the many variations.  Grandma Bunni used to make an easy, no-bake version, that was made with a pre-made graham cracker crust & Cool Whip.  I've tweaked her original pie recipe to make a lower fat version, that has a fat-free filling made with fat-free sweetened condensed milk & fat-free Cool Whip.  I'm calling my version ~ Key Lime Cream Pie.  

I've found an easy recipe for a quick, no-bake graham cracker crust, over at the blog ~ Chocolate Covered Katie.  For my crust, I very slightly adapted her recipe ~ I used cinnamon grahams, since that is what I had handy.  I found that I like the subtle, little extra hit of flavor the cinnamon gives it.  Regular or Low-Fat grahams will work.  This crust is so easy to make & I think you could use just about any type of cookie crumbs that you'd like.  Or, use a store bought graham cracker pie crust ~ but I think once you try this simple version, you'll never need/want to buy another one again!  Thank you for the recipe, Katie!!  

For the pie filling, use fresh key limes if you've got 'em ~ or use regular limes, of you don't.  Hope you like this ~ pleasingly sweet but slightly tart, smooth & creamy, low-fat, no-bake spin on the classic Key Lime Pie.

 

Easy Low-Fat Key Lime Cream Pie with No-Bake Homemade Graham Cracker Pie Crust
makes one pie

Ingredients

  • 1/2 cup fresh squeezed Key Lime juice (or regular lime juice)
  • 1 tub Fat-Free Cool Whip, thawed
  • 1 14 oz. can fat-free sweetened condensed milk
  • 2 drops yellow food color, 1 drop green food color (optional)

  • 10 sheets graham crackers (plain or cinnamon, low-fat or regular)
  • 3 Tbsp milk (whatever kind you like)
  • Pam cooking spray
  • limes slices & extra Cool Whip for garnish (optional)


Directions for graham cracker crust

Blend graham crackers in food processor until they turn into a fine crumb.  Add in the milk & mix until fully incorporated.  Spray pie pan with Pam, pat the moistened crumbs into the pie pan & set aside ~ then proceed with the pie filling.  No baking required!  Easy-peasy!




Directions for pie filling

Whip fat-free sweetened condensed milk, in a large bowl, until airy.  Gently fold in the thawed Fat-Free Cool Whip until well blended.

Add the fresh squeezed key lime juice & 3 drops of food coloring (if using) & mix well.  The mixture will begin to set up quickly.

Pour mixture into the prepared graham cracker pie crust, smooth the top & chill several hours.

Serve garnished with extra Cool Whip & lime slices, if you're so included.
