PB2 Chocolate Peanut Butter Oat Breakfast Cookies


PB2 Chocolate Peanut Butter Oat Breakfast Cookies ~ Using PB2 Powdered Peanut Butter makes these cookies lower in fat since it has 85% less fat calories than traditional peanut butter.

I've been craving chocolate & peanut butter lately, must be because of the bag of Halloween candy we still have hanging around the house.  So, I decided to channel that craving into making a new batch of breakfast cookies.  Using ~ PB2 Powdered Peanut Butter ~ instead of traditional peanut butter makes these cookies lower in fat, but with all the flavor.  These breakfast cookies are flour, egg & dairy free.  Hope you enjoy this new flavor spin. 


PB2 Chocolate Peanut Butter Oat Breakfast Cookies
makes 18~24 cookies, depending on size



Ingredients
  • 1/3 cup PB2 Powdered Peanut Butter (regular or chocolate flavored)
  • 1/3 cup water
  • 2 bananas, mashed until creamy
  • 2/3 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 2 Tbsp dark cocoa powder
  • 2 cups quick oatmeal, uncooked
  • 2 Tbsp raisins
  • 2 Tbsp carob chips (or chocolate chips)
Directions

Preheat oven to 350 degrees.

Mix, in a small cup ~ PB2 Powdered Peanut Butter with water and stir until completely blended.  Set aside.

Combine the mashed bananas, applesauce, vanilla extract and cocoa powder in a large bowl.  Stir thoroughly, add the PB2 mixture and stir again until well combined. Stir in the remaining ingredients and let sit for 10 minutes. 

Drop cookie dough, by spoonfuls, onto a parchment paper lined cookie sheet & flatten cookies into circles.

Bake approx. 20-25 minutes, or until done to your liking.

Remove from oven & let rest on cookie sheet for 5 minutes, then move to cooling rack.
 
Store in a covered container when completely cool.

    1. Hi Jentry! PB2 is wonderful. I found out about it from a reader who left a comment asking about using it. I buy mine on Amazon, both regular & chocolate. I've found that if I mix it about 1 1/3 to 1, (instead of 2 to 1) and let it sit in the fridge overnight, it will thicken up & the taste seems to get more 'peanut-y'. I think the thinner texture is fine & you get 'more' in your serving. You might want to try it with a little bit to see what you think. I've also blended PB2, water, banana, Equal & cocoa powder ~ in a small food processor & made a 'sorta' chocolate sauce. It was really good on ice cream. The sky's the limit with PB2! :)

  2. Good morning! How long will these keep for? Can you freeze them?

    1. Hi Ann Marie! We go through a batch about every 3 days, so that is the cookie life expediency around here. Since they don't have any preservatives, they should be kept in the fridge if you think it will take you more than 3 days to finish them. (maybe sooner if you live in a really warm location)

      You can freeze the baked cookies. I think they taste better when fresh baked, but I've frozen them before. Just let them thaw before eating, it doesn't take long at all. Thanks so much for stopping by & commenting ~ Cheers!

  3. Oddly, I found my PB2 at a local Fry's grocery store (Kroger store) & no more having to order online. Yay!

  6. I went to the Weight Watches Website and found if you make 18 cookies they should be 2 points-that would be the "new" point value. Hope this help.

  7. These are pretty good, but if I ever make them again I would definitely add a sweetener like Stevia. I left out the chocolate chips, so maybe that's the reason they didn't taste very sweet.

    1. The chocolate chips do help with the sweetness, so adding a bit of additional sweetener should do the trick. Honey is also nice, as well as agave or maple syrup. :)
