Feasting on Thanksgiving Day

Happy Thanksgiving!

Today we are going to watch the Macy's Thanksgiving Day Parade.  Today we are going to watch football.  Today we are going to feast on all the traditional Thanksgiving Day foods and eat ourselves into a food coma.  Today we are going to eat a lot of desserts ~ pumpkin pie, apple pie, Bachelor Pumpkin Pie mini-tarts, ice cream and whatever else is brought to our Thanksgiving table, by our dear friend, Dick. 


My friend, Spencer, shared his recipe for making ~ Bachelor Pumpkin Pie.  It only has three ingredients: a can of pumpkin pie filling, a tub of Cool Whip and a store bought, premade graham cracker crust.  He just gently folds the pumpkin pie filling into the Cool Whip and pours it into the graham cracker crust.  Then he lets it sit in the fridge until it is chilled through.  This pie has a soft, light and airy, chiffon-like texture, instead of the denser, traditional pumpkin pie texture.  We decided to make it into little individual 'mini' pumpkin pies by using the mini-graham cracker tart-sized crusts.  That way everybody gets a 'whole pie' to themselves and we don't have to mess around with cutting the pie into slices, we can just dig right in.
