I was a little worried that they wouldn't have a normal cookie consistency, so I added a bit of baking soda and salt and they rose up just the right amount and were soft and chewy. I often eat the 'cookie dough' before I bake them, too. (I even did a post about that very habit, great minds think alike :) Glad to hear that you were able to tweak them to work for your daughter's dietary needs. I wonder if your scooper has settled into the powder & needs to be 'dug out' of your container? Usually they provide a scooper for you. Hope your little one likes the cookies. I...I'd say it is the instant packs of oatmeal. I've only used old fashioned/traditional oatmeal & the 'quick' oats -- never the 'instant' oats. I'm betting that the 'instant' turn out A LOT more mushy/gooey that the others would. I also don't think they would absorb the moisture from the applesauce/bananas the same way. The old fashioned & quick oats will pretty much retain their shape as they absorb the moisture, but will start to stick together as they sit. If you try the cookies again, try them with those type of oats.<br /><br />If you still want to try them with the instant oat packets, I'd probably add about 1/3 to 1/2 cup more, to try to absorb more of the moisture....or maybe only use one banana, instead of two. If you did it that way, you'd probably get less of the banana flavor. <br /><br />Using sweetened applesauce is no biggie, just makes the cookies sweeter. The slim fast shouldn't be a prob either. Maybe with the sweeteners in the applesauce, the slim fast & the oatmeal packets diluted the 'flavor' of the peanut butter...just a thought.<br /><br />Thanks so much for stopping by to comment & for trying the cookies. I almost always have a batch stored in the freezer. Just pop them in the microwave for a few seconds and they are good to go.
