I didn't have dried fruit so put in 3 bananas, I used 3 egg whites instead of 2 (because you used 3 egg whites in your corn blueberry muffin), and I added a teaspoon each of vanilla and almond extract. <br /><br />I ended up with 24 muffins using my cupcake tins. (2 inch diameter, 1 inch deep) Makes sense that my volume of bananas would add a few more muffins, but not double the amount in the recipe.<br /><br />What size muffin tins are you using?<br /><br />Because I ended up with so many, to add some variety, I added these to the top of some of the muffins: blueberries or strawberry or half nuts or 3 chocolate chips. They did help lower my cholesterol. I find cooking for the minimum recommended baking length keeps them moister. Also, they are freezable and reheatable quickly in microwave.
